Preparation
- Pat salmon fillets dry and cut into uniform 1-inch cubes. Season with salt and black pepper.
- In a bowl, whisk together flour, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), remaining salt, and black pepper.
Bang Bang Sauce
- Mix mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey or maple syrup in a bowl until smooth.
Cooking
- Dredge salmon pieces in the flour mixture, shaking off excess flour.
- Heat oil in a pot to 350°F-375°F. Fry salmon in batches for 3-5 minutes until golden brown.
- Drain fried salmon bites on a wire rack over a baking sheet lined with paper towels.
- Toss drained salmon bites in the Bang Bang Sauce and transfer to a platter. Garnish with cilantro and sesame seeds.
