Salmon Bites Ingredients
  • 1.5-2 lbs boneless, skinless salmon fillets
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper optional
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3-4 cups neutral oil for frying
Bang Bang Sauce Ingredients
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tbsp sriracha
  • 1 tbsp fresh lime juice
  • 1 tsp honey or maple syrup optional
  • fresh cilantro or green onions for garnish
  • toasted sesame seeds for garnish

Method
 

Preparation
  1. Pat salmon fillets dry and cut into uniform 1-inch cubes. Season with salt and black pepper.
  2. In a bowl, whisk together flour, cornstarch, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), remaining salt, and black pepper.
Bang Bang Sauce
  1. Mix mayonnaise, sweet chili sauce, sriracha, lime juice, and optional honey or maple syrup in a bowl until smooth.
Cooking
  1. Dredge salmon pieces in the flour mixture, shaking off excess flour.
  2. Heat oil in a pot to 350°F-375°F. Fry salmon in batches for 3-5 minutes until golden brown.
  3. Drain fried salmon bites on a wire rack over a baking sheet lined with paper towels.
  4. Toss drained salmon bites in the Bang Bang Sauce and transfer to a platter. Garnish with cilantro and sesame seeds.
