  • ¼ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¼ cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix milk, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. For the cinnamon swirl, combine light brown sugar and ground cinnamon in a small bowl.
  6. Fill muffin cups halfway with batter; sprinkle some of the cinnamon mixture on top. Add remaining batter over the swirl.
  7. For the crumble topping, mix flour, brown sugar, ground cinnamon, and melted butter until crumbly; sprinkle over each muffin.
  8. Bake for 18-22 minutes or until golden brown and a toothpick inserted comes out clean.
  9. Allow muffins to cool for five minutes before transferring them to a wire rack.
