  • 200 g pasta (penne, spaghetti, or any preferred type)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 can (400g) crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 200 g ricotta cheese
  • 2 tablespoons freshly grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente according to package instructions (8-10 minutes). Reserve a cup of pasta water before draining.
  2. In a large skillet over medium heat, sauté minced garlic in olive oil for about 1-2 minutes until fragrant.
  3. Add crushed tomatoes to the skillet and simmer for about 10 minutes to thicken.
  4. Stir in oregano, basil, red pepper flakes, salt, and black pepper; let simmer for a few more minutes.
  5. Reduce heat to low and mix in ricotta cheese until creamy. Adjust consistency with reserved pasta water if needed.
  6. Combine drained pasta with sauce in the skillet and toss gently.
  7. Sprinkle grated Parmesan on top and serve hot, garnished with fresh basil leaves.
