Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup vegetable oil
  • 1 1/2 cups light brown sugar
  • 3/4 cup smooth peanut butter
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/4 cup milk
  • 3/4 cup unsalted butter
  • 2 ounces cream cheese
  • 3/4 cup peanut butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 1/24 1/2 cups powdered sugar
  • 12 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another large bowl, combine the vegetable oil and light brown sugar until well mixed. Add in the smooth peanut butter and mix again until fully combined. Then stir in the eggs one at a time along with the vanilla extract and milk.
  4. Gradually add your dry mixture into the wet mixture. Stir gently until just combined—be careful not to overmix!
  5. Divide the batter evenly between your prepared pans. Bake in your preheated oven for about 30 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pans for about ten minutes before transferring them onto wire racks.
  6. In a mixing bowl, beat together softened unsalted butter and cream cheese until creamy. Gradually add in peanut butter and mix well. Slowly incorporate powdered sugar along with salt and vanilla extract until smooth. If needed, add heavy cream to reach your desired consistency.
  7. Once your cakes have completely cooled, spread frosting between layers first before covering the entire cake with more frosting.
