  • 1 pound beef chuck roast
  • 3 cups chopped sweet potatoes
  • 1/4 cup chopped celery
  • 1 small yellow onion, diced
  • 1 (8-ounce) bag baby carrots
  • 11/2 cups frozen corn
  • 1 (14.5-ounce) can diced tomatoes
  • 2 tablespoons flour
  • 1 tablespoon beef bouillon powder
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1 teaspoon minced garlic
  • 1/2 teaspoon paprika
  • 1 bay leaf
  • 1 cup water

Instructions

  1. Lightly coat your slow cooker with cooking spray.
  2. In a bowl, toss the beef with flour, seasoned salt, and pepper until well coated.
  3. Place the seasoned beef in the slow cooker. Add sweet potatoes, celery, onion, baby carrots, corn, diced tomatoes, garlic, paprika, bouillon powder, and water. Stir well.
  4. Cover and cook on low for 7–9 hours or high for 5–7 hours.
  5. Before serving, remove the bay leaf and gently mash some sweet potatoes to thicken the stew.
