  • 2 large sweet potatoes, cubed
  • 1/2 medium red onion, sliced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 oz mixed greens
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsp garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Place sweet potatoes on one half of a baking sheet and chickpeas on the other.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Drizzle half over the vegetables.
  3. Move chickpeas closer to sweet potatoes and add sliced onion. Bake for about 30 minutes until tender; stir halfway through.
  4. Allow to cool slightly before mixing with greens in a large bowl. Add remaining dressing and toss gently.
  5. Garnish with fresh herbs and serve immediately.
