  • 4 x 6-ounce salmon fillets
  • 2 tablespoons olive oil
  • 3 cups baby spinach
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Pinch of cayenne pepper
  • 5.3-ounce block feta cheese
  • ¼ cup grated parmesan cheese
  • ¼ cup roasted red peppers (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and place the salmon fillets skin-side down. Cut a pocket into each fillet.
  3. Brush the salmon with olive oil and season with salt and pepper.
  4. In a pan, heat remaining olive oil over medium heat; add spinach, Italian seasoning, paprika, cayenne pepper, salt, and pepper. Cook until wilted.
  5. Stir in roasted red peppers, feta, and parmesan until well combined.
  6. Generously fill each salmon pocket with the spinach-feta mixture.
  7. Bake for 12 to 17 minutes or until the salmon is flaky but moist.
