  • 1½ cups whole milk

  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water

  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 1 tsp garlic powder
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Prepare the Steak: Pat dry the steak and rub it with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Sear the Steak: Heat a skillet and sear the steak for 4–5 minutes on each side until desired doneness. Rest for 5–10 minutes before slicing.
  3. Cook the Rice: Rinse rice under cold water. In a pot, heat olive oil, toast the rice with garlic powder, then add broth or water and simmer until cooked (18–20 minutes).
  4. Make the Queso Sauce: In the same skillet, melt butter and sauté garlic until fragrant. Gradually stir in milk and cheeses until smooth; season to taste.
  5. Assemble: Serve fluffy rice topped with sliced steak and queso sauce. Garnish with cilantro, lime wedges, avocado slices, or jalapeños if desired.
