  • 1/2 cup unsalted butter, melted and slightly cooled
  • 6 oz cream cheese, softened
  • Optional: pumpkin seeds for topping

Instructions

  1. Prepare the cream cheese filling by beating together softened cream cheese, granulated sugar, and vanilla until smooth. Chill in the fridge.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, mix pumpkin puree, egg, melted butter, and vanilla extract.
  4. Combine wet ingredients into dry ingredients gently until just mixed.
  5. Fill muffin cups halfway with batter and pipe in the cream cheese filling before covering with more batter.
  6. Optionally sprinkle with pumpkin seeds.
  7. Bake in a preheated oven at 350°F (175°C) for 18–22 minutes or until golden brown.
