3 cups cooked sushi rice
1 lb sushi-grade salmon
4 tbsp Kewpie mayo
2 tbsp Sriracha
Vegetable oil (for frying)

Instructions
Prepare the sushi rice by mixing rice vinegar, sugar, and salt in a bowl until dissolved. Combine this mixture with the cooked sushi rice.
Transfer the seasoned rice to a baking pan lined with plastic wrap, pressing down to create an even layer. Refrigerate for at least 4 hours or overnight.
Heat vegetable oil in a skillet over medium-high heat. Cut the chilled rice into squares and fry until golden brown on both sides (approximately 3-4 minutes per side).
