  • 1 pound of cherry tomatoes
  • 1 head of garlic
  • 3 tablespoons of olive oil
  • Salt and pepper, to taste
  • 1 pound of pasta (spaghetti or your choice)
  • 1/2 teaspoon of red pepper flakes (optional)
  • 1/4 cup of fresh basil leaves, chopped
  • 1/2 cup of grated Parmesan cheese (or dairy-free alternative)
  • 1 tablespoon of balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the cherry tomatoes and pat dry. Place them in a mixing bowl.
  3. Slice off the top of the garlic head and drizzle it with olive oil.
  4. Toss the tomatoes with two tablespoons of olive oil, salt, pepper, and red pepper flakes. Spread on a baking sheet alongside the garlic.
  5. Roast in the oven for 25-30 minutes until caramelized.
  6. Meanwhile, cook pasta according to package instructions until al dente.
  7. Squeeze roasted garlic into a bowl and mash with the tomatoes.
  8. Stir in remaining olive oil and balsamic vinegar if using; season to taste.
  9. Combine pasta with the tomato mixture and fold in fresh basil.
  10. Serve hot, topped with grated Parmesan cheese.
