Ingredients

  • Boneless, skinless chicken breasts
  • Soy sauce (or tamari)
  • Honey
  • Garlic cloves
  • Fresh ginger
  • Fresh pineapple slices
  • Cauliflower rice
  • Olive oil

Instructions

  1. Marinate the chicken: In a bowl, whisk together soy sauce, honey, minced garlic, and grated ginger. Add chicken and let it marinate for at least 30 minutes.
  2. Grill chicken & pineapple: Preheat grill to medium-high heat. Grill the marinated chicken for 6–7 minutes per side until fully cooked (internal temperature of 165°F). Grill pineapple slices for 2–3 minutes per side until caramelized.
  3. Cook cauliflower rice: In a skillet, heat olive oil over medium heat. Sauté cauliflower rice seasoned with salt and pepper for 5–7 minutes until tender.
  4. Assemble the bowls: Slice grilled chicken into strips and layer over cauliflower rice along with caramelized pineapple. Garnish with chopped green onions.
