  • ½ cup unsalted butter (melted)
  • ¾ cup brown sugar (packed)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1½ cups old-fashioned oats
  • ⅔ cup chopped pecans

Instructions

  1. Preheat oven to 350°F (176°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, ground ginger, allspice, cloves, nutmeg, and salt.
  3. In another bowl, combine melted butter and brown sugar until smooth. Add egg and vanilla; mix well.
  4. Gradually add dry ingredients to wet mixture until just combined. Fold in oats and pecans.
  5. Chill dough for about 15 minutes in the refrigerator.
  6. Scoop tablespoon-sized balls of dough onto prepared sheets, spacing them apart.
  7. Bake for 12–15 minutes until golden on the edges but slightly under-baked in the center.
  8. Cool on the baking sheet briefly before transferring to a wire rack.
