  • 1 cup all-purpose flour (125 grams)
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (112 grams) (softened)
  • 24 drops green food coloring
  • 1 1/2 teaspoons peppermint extract (to taste)
  • 1/4 teaspoon salt
  • 22 1/2 cups powdered sugar (220275 grams)
  • 12 tablespoons heavy cream (or whipping cream or milk, as needed)
  • 6 oz semi-sweet chocolate (about 3/4 cup chocolate chips or 170 grams) (or 50% dark chocolate)
  • 1/2 cup unsalted butter (112 grams)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a baking pan with parchment paper.
  2. In a saucepan over low heat, melt together unsalted butter and semi-sweet chocolate until smooth.
  3. In a mixing bowl, combine the melted mixture with sugar, then stir in eggs one at a time. Sift in cocoa powder, flour, and salt; fold gently until just combined.
  4. Pour into the prepared pan and bake for about 30 minutes or until slightly moist when tested with a toothpick. Cool completely.
  5. For the mint frosting, beat softened butter with peppermint extract, salt, and food coloring; gradually mix in powdered sugar until smooth.
  6. Spread the frosting on cooled brownies.
  7. Melt additional semi-sweet chocolate with butter for the topping; pour over frosted brownies and spread evenly.
  8. Chill for at least an hour before cutting into squares.
