  • 8 corn tortillas (6-inch size)
  • 1 tablespoon cooking oil
  • 8.5 ounces canned corn (drained)
  • 1 1/2 cups cooked chicken, shredded
  • 8 ounces salsa (store-bought or homemade)
  • 2 tablespoons taco seasoning mix
  • 15 ounces black beans (rinsed and drained)
  • 2 cups shredded colby jack cheese
  • Fresh cilantro leaves
  • Tomatoes

Instructions

  1. Heat a skillet over medium heat and add cooking oil. Fry each corn tortilla until crispy and golden brown on both sides. Drain excess oil on paper towels.
  2. In a bowl, mix together shredded chicken, salsa, and taco seasoning until well combined.
  3. Layer the chicken mixture on each tortilla, followed by canned corn and black beans. Top with plenty of shredded cheese.
  4. Return assembled tostadas to the skillet over low heat until warmed through and the cheese melts slightly.
  5. Garnish with fresh tomatoes and cilantro before serving with a squeeze of lime.
