Ingredients

  • Boneless, skinless chicken breasts
  • Medium zucchini
  • Olive oil
  • Fresh garlic
  • Lemon juice
  • Lemon zest
  • Italian herbs (oregano, basil, thyme)
  • Salt and pepper
  • Grated Parmesan or crumbled feta cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. Season chicken breasts with salt, pepper, and half of the oregano, basil, and thyme.
  3. Slice zucchini into rounds or half-moons; toss with olive oil, minced garlic, lemon juice and zest, and remaining herbs.
  4. Layer seasoned chicken in the center of the baking dish; arrange zucchini slices around it.
  5. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C). Add cheese during the last 5 minutes if desired.
  6. Let rest for 5-10 minutes before serving.
