  • 2 chicken breasts (cubed)
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream)
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients by slicing the chicken, halving the tomatoes, and measuring out the broth, cream, lemon juice, and zest.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper; cook until golden brown (about 5–7 minutes). Remove from skillet and set aside.

  4. Pour in chicken broth; bring to a simmer. Lower heat and stir in cream, lemon zest, and juice.
  5. Add gnocchi; cook for about 3–4 minutes until tender. Stir in spinach until wilted.
