  • 2 large sweet potatoes, cubed
  • 1/2 medium red onion, sliced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 oz mixed greens
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsp garlic, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). On a baking sheet, arrange cubed sweet potatoes on one half and chickpeas on the other.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, cumin, paprika, cinnamon, cayenne pepper, salt, and pepper. Pour half over the vegetables.
  3. Add sliced onion to the baking sheet and toss everything to coat well. Bake for 30 minutes until tender.
  4. In a large bowl, layer mixed greens first then add roasted vegetables and herbs. Drizzle with remaining dressing before tossing gently.
