  • 1 large yellow onion (finely chopped)
  • 56 cloves garlic (minced)
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk (or half-and-half)
  • ½ cup heavy cream (optional)
  • 2 cups sharp cheddar cheese (freshly shredded)
  • Fresh herbs: parsley, chives, thyme
  • Seasonings: salt, black pepper, cayenne pepper or smoked paprika (optional)

Instructions

  1. 1. Peel and cube the Yukon Gold potatoes.
  2. 2. In a large pot over medium heat, melt the butter (or olive oil/butter combination) and sauté the onion until softened.
  3. 3. Add minced garlic and cook until fragrant. Sprinkle flour over the mixture and stir for about two minutes.
  4. 4. Gradually whisk in broth while scraping any browned bits from the bottom of the pot.
  5. 5. Add potatoes, bring to a simmer, cover, and cook for 15-20 minutes until tender.
