  • 1/2 teaspoon onion powder
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup celery, finely diced
  • 1/4 cup green onions, chopped
  • 1/4 cup sweet pickle relish
  • optional 1 chopped hard-boiled egg
  • optional 2 tablespoons fresh parsley, chopped

Instructions

  1. Cook elbow macaroni according to package instructions. Drain and rinse under cold water until cool.
  2. In a large mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, black pepper, garlic powder, and onion powder until smooth.
  3. Add cooled macaroni to the dressing mixture and stir gently to coat evenly.
  4. Mix in red bell pepper, celery, green onions, and optional ingredients like chopped hard-boiled egg if desired.
  5. Taste and adjust seasoning as needed.
  6. Cover tightly and refrigerate for at least 2 hours before serving to allow flavors to meld.
