  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (colorful mix), sliced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp chili powder (optional)
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce or coconut aminos
  • Juice of ½ lime (optional)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onions until soft (about 3 minutes), then add minced garlic and cook for another 30 seconds.
  2. Add ground turkey and cook until no longer pink (5-6 minutes).
  3. Stir in spices: smoked paprika, cumin, chili powder (if using), salt, and black pepper.
  4. Add sliced bell peppers and cook until tender-crisp (3-4 minutes).
  5. Pour in chicken broth, tomato paste, and soy sauce; simmer for 2-3 minutes.
  6. Finish with lime juice if desired and garnish with cilantro or parsley before serving.
