  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1/4 cup fresh lemon juice (about 1 large lemon)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves minced garlic
  • Salt and black pepper to taste
  • Fresh dill for garnish
  • Fresh parsley for garnish

Instructions

  1. Rinse the rice in cold water until the water runs clear and drain well.
  2. Heat olive oil in a medium saucepan over medium heat. Sauté the onion until translucent (about 3-4 minutes).
  3. Add minced garlic and sauté for an additional 30 seconds.
  4. Stir in the rinsed rice, cooking for about 2 minutes until slightly golden.
  5. Combine chicken broth and fresh lemon juice; season with salt and black pepper before pouring into the saucepan.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed.
  7. Remove from heat and let it steam covered for another 5 minutes.
  8. Fluff with a fork and stir in chopped dill before serving.
