Instructions

  1. In a large bowl, whisk together flour, sugars, baking soda, baking powder, salt, ginger, cinnamon, and cloves.
  2. In another bowl, combine melted butter, milk, eggs, molasses, freshly grated ginger, and vanilla until smooth.
  3. Pour the wet mixture into the dry ingredients and whisk until combined; some lumps are fine.
  4. Let the batter rest for about 10 minutes while preheating your waffle iron.
  5. Spray the hot waffle iron with cooking spray and fill it with batter using a large scoop. Cook for about 5 minutes or until crispy.
  6. Keep cooked waffles warm in a low oven while preparing additional batches.
