  • 2 medium zucchinis, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic until translucent (about 2-3 minutes).
  3. Add ground beef to the skillet and cook until browned (5-7 minutes). Drain excess fat.
  4. Stir in sliced zucchini, drained diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
