  • 2 packs (400 g each) artisan flatbread
  • 5 tablespoons pesto
  • 1 cup fresh mozzarella, sliced
  • 4 roma tomatoes, diced
  • 0.25 cup fresh basil leaves, thinly sliced
  • 2 cloves garlic, minced
  • 0.25 cup parmesan cheese, grated
  • 0.5 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • Salt, to taste

Instructions

  1. Preheat oven to 220°C (425°F) and line a baking sheet with foil.
  2. In a bowl, combine diced tomatoes, basil leaves, minced garlic, grated parmesan cheese, balsamic vinegar, olive oil, and salt.
  3. Arrange flatbreads on the baking sheet. Spread pesto over each flatbread and top with mozzarella slices.
