  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)
  • Kosher salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (204°C).
  2. Slice chicken breasts in half lengthwise and arrange them in a baking dish. Season with salt, pepper, and half the minced garlic.
  3. In a bowl, mix softened cream cheese and heavy cream until smooth. Add remaining garlic, onion powder, paprika, Italian seasoning, Parmesan, and half the mozzarella; combine thoroughly.
  4. Spread the mixture over the chicken and sprinkle chopped sun-dried tomatoes on top.
  5. Cover loosely with foil and bake for 20 minutes until chicken reaches an internal temperature of 165°F (74°C).
  6. Stir in chopped spinach and top with remaining mozzarella; bake uncovered for an additional 10 minutes until bubbly.
