  • 1 cup whole milk
  • 1 large egg
  • 1 tablespoon unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 cup grated apple (about 1 medium apple)
  • Butter or vegetable oil for skillet
  • about 1/2 cup maple syrup, warmed
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, clove, and salt.
  2. In another bowl, combine milk, melted butter, egg, and vanilla extract until well mixed.
  3. Add the wet ingredients to the dry ingredients; stir gently until combined.
  4. Fold in grated apple.
  5. Preheat skillet over medium heat; lightly grease with butter or oil.
  6. Pour batter onto skillet using a 1/4-cup measure. Cook until bubbles form on top (about 1-2 minutes), then flip and cook until golden brown (about another minute).
  7. Keep warm in a low oven while cooking remaining batter.
  8. For syrup, mix warmed maple syrup with vanilla extract.
