  • 1/4 cup sugar
  • 1/2 cup melted coconut oil
  • 16 oz cream cheese (or non-dairy alternative)
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup coconut milk
  • 1 tbsp cornstarch
  • 4 cups apples (peeled and sliced)
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 cup oats (gluten-free if needed)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/3 cup melted coconut oil or vegan butter substitute

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted coconut oil. Press into the bottom of a springform pan and bake for 8 minutes.
  2. In another bowl, beat cream cheese and sugar until smooth. Add vanilla extract, coconut milk, and cornstarch; mix well. Pour over crust.
  3. Toss sliced apples with brown sugar, cinnamon, and lemon juice; layer over the cheesecake filling.
  4. In a separate bowl, mix oats, flour, brown sugar, cinnamon, and melted coconut oil until crumbly; sprinkle on top of apples.
  5. Bake for about 60 minutes or until set. Cool at room temperature before chilling in the refrigerator for at least 4 hours.
