  • Digestive cookies or graham crackers
  • Butter
  • Fresh apple cider
  • Cream cheese
  • Brown sugar
  • Sour cream
  • Eggs
  • Spices (cinnamon, mulling spices)

  • Powdered sugar
  • All purpose flour

Instructions

  1. Prepare the apple cider reduction by boiling fresh apple cider with mulling spices until thickened.
  2. Preheat the oven to 350°F (175°C). Make the crust by blending cookies, melted butter, salt, and powdered sugar; press into an 8-inch springform pan and bake for 10 minutes.
  3. Lower the oven temperature to 325°F (160°C). Beat together softened cream cheese and brown sugar until smooth.
  4. Mix in sour cream, vanilla, salt, cinnamon, and reduced apple cider. Gently fold in eggs and flour until combined.
  5. Pour filling over the crust in a water bath and bake for about 90 minutes until edges are set.
  6. Cool gradually in the oven, then refrigerate for at least 8 hours before serving.
