  • 2 lbs Russet potatoes
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 1/4 cup sour cream
  • 1 teaspoon salt, divided
  • 1/4 teaspoon black pepper, divided
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • Cooking spray (olive or avocado oil)
  • Optional add-ins: shredded cheddar cheese, chives

Instructions

  1. Boil peeled and quartered potatoes in salted water until fork-tender (15–20 minutes). Drain well.
  2. Return potatoes to pot while warm and mash until smooth. Mix in milk, butter, sour cream, salt, pepper, and optional add-ins.
  3. Cool mashed potatoes in the fridge for at least 30 minutes.
  4. Set up a dredging station with flour, beaten eggs, and seasoned panko breadcrumbs.
  5. Scoop cooled potato mixture into balls and coat each in flour, egg, then panko.
  6. Chill coated balls again for best results.
  7. Preheat air fryer to 400°F (200°C). Lightly spray basket with cooking spray.
  8. Arrange potato balls in a single layer and air fry for 8–10 minutes until golden brown.
